1. Truffle hunting in Tuscany - if you like to work for your meals then this is for you! Truffles are seasonal so if you want the black ones they can be year round but the more famous white truffle if found October thru December.
2. Berber cooking class in Morocco - this is a historical cooking method. This experience is in real homes taught by women who have used this method for decades. Visit March thru May when herbs and vegetables.
3. A kaiseki dinner in Kyoto - this experience is best for those fan who like tasting menu's. A 10 course meal is crafted with seasonal ingredients so you never get the same thing.
4. Underground bread baking in Iceland - this is great for those you love ancient grains. A year round experience but best to visit between May and September when the weather is less harsh.
5. Pachamanca in Peru - if you love cookout's this one is for you. Visit during the dry season May to September. Get your ingredients from the local market and then the cooking happens in clay pots.
6. Mole-making class in Oaxaca - if you grew up cooking with Granma this is a great experience. Visit in late October thru November for this highly complex sauce with upwards of 20 ingredients.
7. Alpine cheese workshop in Switzerland - the cheese made in the Bern region is only made for a few months each year so book between May and September.
8. Hangi meal in Auckland - great for a group of friends you will use geothermal energy to slowly steam the food in muslin bags
